CSA Week 17 - SQUASH!

Oh no! The squash has arrived!

  • Sunshine Kabocha Squash (1)
  • Mei Qing Choi (1 head)
  • Red Russian Kale (1 bunch)
  • Broccoli (1 head)
  • Fennel (1 bulb)
  • Beefsteak Tomatoes (4)
  • Juliet Tomatoes (pint)
  • Mariachi Hot Peppers (3)
  • Green Beans (quart)
  • Lettuce
  • Basil
  • Cilantro
  • Arugula

I will be brave; I will try to find a palatable way to prepare the squash. Otherwise, it would make a very sweet little jack-o-lantern, and Halloween is just around the corner...

We are finally at the point of drowning in vegetables. We are overrun with broccoli, awash in tomatoes, swimming in peppers, inundated with salad greens. It may be time to start putting some things (other than tomatoes) into the freezer. Like soup, glorious soup. The thing about soup is that it is generally thoroughly forgiving. And, if frozen in two-cup containers, it makes a perfect lunch for a workday - toss the frozen container in your bag, stick it in the waver at lunchtime, and ta da! I would totally eat that squash. I would have taken it for a little pumpkin, though, if no one had told me otherwise. I think I'm going to eat my scary squash, too. Maybe I'm just at that stage of pregnancy where I'll eat anything.

Drowning in vegetables doesn't sound so bad ... sorry about the squash -- that's one thing I've never gotten too excited about.

I love soup made from butternut squash, but I have never tried Sunshine Kabocha Squash.

My favourite way to do squash is to prick it with a fork, microwave or oven cook it until it's tender, scoop out the insides (sans seeds), mash it up with a bit of butter and drizzle maple syrup over top. So good.

Thanks for your comment on my blog today! I think I misled my readers into thinking all my junk is in that little drawer. I need to take more pictures of the rest of my house. It's everywhere!

As I recall, it was squash soup that inspired that very post. Nothing beats a good squash soup. Unless, of course, it's a squash stuffed with a wild rice pilaf and baked. Mmmmmm. Enjoy your veggies. You've got me craving and arugula salad.

And you just can just puree it and hide it in sauces...but I really like squash, so.

If you don't LIKE squash, you can roast it and then simmer it into an addition for winter soups.

Wow. I just googled "sunshine squash soup" and this is where it led me. I am making soup today (taking off from a trusted old recipe) with my sunshine squash, salad turnips, and potatoes - all from my CSA. I'll throw in some carrot and onion and red pepper flakes and then puree the whole mess. I expect to love it!
